Job Details

Creates/prepares/produces/bakes menu items according to standard recipes, in order to contribute the overall guest satisfaction.

ESSENTIAL FUNCTIONS

  • Creates, prepares/produces/bakes all breakfast, lunch and dinner items in the restaurants and banquets. Knows ingredients and communicate to front of house staff to ensure no allergies are compromised.
    • Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices.
    • Turn or stir foods to ensure even cooking.
    • Season and cook food according to recipes or personal judgment and experience.
    • Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
    • Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
    • Portion, arrange, and garnish food, and serve food to waiters or patrons.
  • Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration of same.
  • Is knowledgeable of US Standards for maintaining proper sanitation requirements on storage or preparation of foods.
  • Interacts with guests while maintaining (in regards to freshness and cleanliness) an action station
  • Ensures spoilage/waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
  • Develop new products for a la carte and catering menus on a rotating basis.
  • Set daily pars on all products to ensure freshness.
  • Assists in the professional development of interns

 

SUPPORTIVE FUNCTIONS

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.

 

  • Perform other duties as requested, such as working in other stations as needed
  • Keeps work station neat and orderly – “clean as you go.”
  • Assist with special duties or special orders or products whenever possible

 

REQUISITE SKILLS:

No job description for a position can possibly include all duties which may be requested by guests or required by the hotel. The objective of all positions is to effectively provide the requested service personally, or to immediately refer requests to the appropriate department manager. The following is a summary of the major responsibilities of the position.

  • Safe knife handling skills
  • Be upbeat and friendly, have fun doing what you do.
  • Be familiar with all hotel operations and services so guest questions can be accurately answered
  • Maintain professional behavior and attitude. No socializing during operating hours
  • Take responsibility for and maintain equipment; notify supervisor of problems
  • Memorize specials, up sell local favorites and/or specials
  • Ability to read the English language to fully comprehend guest requests, memos, reservations, promotional materials, event orders and similar written materials.

GUIDELINES

The hospitality business functions seven days a week, twenty-four hours a day. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.

EDUCATION

  • High school graduate or equivalent required.

EXPERIENCE

  • Restaurant line cook or banquet cook experience preferred.
